Traditional Christmas Pudding


  • 500g mixed dried fruits (apricots, sultanas or raisins)
  • 100g dates, chopped 
  • 125g suet
  • 1 orange, zest of
  • 125g plain flour
  • 125g caster sugar
  • 3 tbsp of chopped crystallised ginger
  • 150g fresh white breadcrumbs
  • 2 tbsp vin santo or brandy
  • 1 handful of chopped nuts (pecans, hazelnuts or Brazil nuts)
  • 1 medium free range egg
  • 150ml milk
  • Golden syrup, to serve


  1. Grease 1.5 litre pudding bowl
  2. Mix all the ingredients together, except golden syrup. Put the mixture into the greased bowl and cover with a double layer of aluminium foil. Tie a piece of string around the side of the bowl. 
  3. Bring the water to boil, place a tight fit lid on top and let it simmer for 3 hours. Ensure the water doesn't boil dry as it will burn and the bowl will crack.
  4. When its ready remove the foil, turn out onto a plate, drizzle with golden syrup and decorate it as you like. You can also light with brandy!
