Slices of bread with honey and fruit

1. Pre-heat the oven to 210 degrees
2. Add the lemon juice to the milk. As you are working the recipe, the milk will curdle.
3. Grease an 18cm square loaf tin with a knob of butter and dust with oat flakes.
4. In a bowl mix together the flour, butter, salt, sugar and bicarbonate of soda preferably using a dough paddle in an electric mixer.
5. Pour in the curdled milk and yogurt and mix until the dough resembles a thick paste.
6. Scrape the dough into the tin and sprinkle on some oat flakes on the top.
7. Tap down the tin so the dough sits down in an even layer.
8. Cover the top with foil and bake for 25 minutes.
9. Remove the foil and bake for a further 25 minutes.
10. Leave to cool down for a few minutes and the tip the bread out onto a cooling rack.
