Marmalade Muffins


You can buy all these ingredients in our Food Hall:
· 150g plain flour
· 1 dessert spoon of baking powder
· ¼ teaspoon of salt
· 1 heaped tablespoon of ground almonds
· 50g unsalted butter - melted down and cooled slightly
· Zest and juice of 1 large orange
· 1 large egg
· 220g Mrs. Bridges fine cut marmalade

Marmalade Muffins
Muffin ingredients

1. Line a muffin tin with 6 muffin cases and brush each case with melted butter.
2. Preheat the oven to 200/180 degrees.
3. Pour Mrs. Bridges marmalade into a bowl and stir with a wooden spoon to loosen the mixture.
4. In a separate bowl, sift in the flour, baking powder and salt.
5. In another bowl whisk together the orange juice, zest, almonds, eggs, milk and melted butter.
6. Return the dry ingredients to the sieve. Sift straight into the wet ingredients which you have whisked together.
7. Fold the dry ingredients into the wet ingredients quickly. The mixture should look uneven.
8. Fold in the 220g of Mrs. Bridges marmalade, which you previously stirred up.
9. Divide the mixture evenly between the muffin cases.
10. Bake for approximately 25 minutes in the centre of the oven. Muffins should be golden brown in colour and well risen.
11. When cooked remove from the oven and transfer to a wire rack to cool.
12. Brush the tops with the extra marmalade

Store in a cool, dry place, in an airtight tin.
