Seville orange marmalade

You can buy all these ingredients in our Food Hall:

  • 500g Seville Oranges (whole)
  • 2 litre water
  • 1½ kg jam sugar
Marmalade Muffins

1. Boil the seville oranges in 2 litres of water until they begin to feel very soft – this process will take around 2 hours. Pour the liquid into a preserving pan or If you do not have one, a large saucepan.

2. Slice the oranges into wedges, while removing the pips with a knife then gently squeeze the segments of orange over the pan - while being careful as they’ll be very juicy. Thinly slice the segments, then add to your pan with the jam sugar. Dissolve the jam sugar over the heat then boil for 7-10 mins, stirring occasionally, until a little of the mixture dropped onto a chilled plate sets and wrinkles when you push your finger through. Leave to settle for 15 mins before potting into sterilised jars.
