Chicory, Apple & Stilton Salad with Fig preserve dressing


  • 3 Heads of Red & White chicory, washed

  • 2 Apples, sliced

  • 2 Tablespoons of Hazelnuts, roughly chopped & toasted

  • 100g Stilton or other Blue Cheese, crumbled

  • 3tbsp. Mrs Bridges Fig Preserve

  • 2tbsp. Balsamic Vinegar

  • 6 tbsp. Light Olive Oil


  1. In a shallow bowl, combine the chicory leaves and chopped apple slices.
  2. Sprinkle the chopped hazelnuts and Stilton cheese over the chicory and apples.
  3. Whisk the fig preserve, balsamic vinegar and olive oil then drizzle over the salad.
